Shizuoka Sake Tasting 29/1~4: Fujimasa Brewery

I was recently given a bottle by Fujimasa Brewery In Fujinomiya City.
As I’m not one to refuse a bottle, I gladly accepted and drank (tasted) it!

Fujimasa Brewery: Nama Sake
Alcohol: 15~16 degrees
Bottled in May 2008

Clarity: Very clear
Colour: transparent
Aroma: Fruity: banana, pineapple
Body: Velvety
Taste: Solid attack. Shortish tail. Warminh up back of the mouth.
Fruity: banana, pineapple, bitter chocolate, coffee beans.
More complex than expected.
Dry finish with almonds and coffee beans.
Stands well to food

Comments: Unexpectedly elegant for a nama futsushu!
Very clean and fruity.
Turns quickly drier.
A sake for food!

Junmai Shu

I’m starting enjoying Fujimasa Brewery from Fujinomiya City! Pity it is a bit difficult to get hold of their brews in Shizuoka City!

Fujimasa Brewery: Junmai Shu

Rice: Nishihomare
Rice milled down to 60%
Dryness: +4
Acidity: 1.4
Alcohol: 15.5 degrees
Bottled: May 2008

Clarity: Very clear
Colour: Almost transparent
Aroma: Dry, pleasant, complex. Bitter chocolate, almonds, hint of bananas
Body: Velvety~fluid
Taste: Short tail. Dry. Only slight junmai tingle.
Complex. Bitter Chocolate, almonds, coffee beans.
Very pleasant, elegant.
Varies little with food.

Overall: “Shizuoka-type sake”. Pleasant, elegant sake fit for any food.
Thoroughly enjoyable by itself, too. Leaves strong but very short Impression. Calls for the next sip.

Fuji no Uta Honjozo

This is my second bottle from Fujimasa Brewery in Fujinomiya City. The first one was futushu/normal sake. This one is one rank higher.

Fujimasa Brewery: Fuji no Uta Honjozo

Rice: Nishi Homare
Rice milled down to 65% (although they say 60% on their Homepage)
Dryness: +3
Acidity: 1.3
Alcohol: 15.5 degrees
Bottled: April 2008

Clarity: Very clear
Colour: Amost transparent
Aroma: Dry, fruity: Vanilla. Alcohol
Body: Velvety
Taste: Short tail. Complex. Alcohol wrming up back of the palate. Almonds, bitter chocolate.
Coffee beans appearing with food.
Turns sweetish with food.
Strikes a good balance with alcohol.

Overall: A sake designed for food.
Very pleasant and easy to drink. Ought to be tried lukewarm, too.

Genkotsu

Banzai! Finally got hold of a few (3) evasive bottles from Fujimasa Brewery in Fujinomiya City!
The first one, being a futsushu will certainly interest Melinda and Etsuko!
By that I almost closed full circle. Only one Brewery left to investigate after this one!

Fujimasa Brewery: Genkotsu (“The Clenched Fist”), “Hone aru Otoko no Sake (“The Man with Bones Sake”)
Rice: Oogonbore
Rice milled down to 70% (extravagant!)
Dryness: +8
Acidity: 1.2
Alcohol: 15.5 degrees
Bottled: April 2008

Clarity: very clear
Colour: Almost transparent
Aroma: Fruity, bitter chocolate, almonds, bananas
Body: Velvety
Taste: Shortish tail. Fruity and dry balance. Solid sake.
Almonds, almost tastes like an Almaretto.
Tends to take a back seat with food, becoming more fluid, backed with almonds.

Overall: For all the macho (Tim, listen!) image, proves a gentle brew easy to drink. Would definitely be popular with ladies during a meal.
Tends to strengthen with salty foods.
As futsushu, holds itself very well and deserves a special mention like all Shizuoka Futsushu, which are simply extravagant! Extremely good value for your money!
